Kraft Mac & Cheese Gluten Free

Happy day! You can now buy Kraft Mac & Cheese Gluten Free.

I found mine at Target.

The instructions were easy to follow. Boil the noodles. Drain and return to the pot. Add butter or margarine and milk. Stir in the powdered cheese. Enjoy.

The cooked pasta had a great texture. The flavor was only very mildly cheesy. It actually looked like the picture on the box.

There are other packaged gluten free mac and cheese products available. Annie’s sells a number of different varieties including microwavable single cups that are easy to bring for travel or can be left in an office drawer for an emergency meal.

Of course, homemade mac and cheese is another option.

Life Cuisine Cauliflower Crust Pizza

I highly recommend this personal sized frozen pizza.

There’s the fun factor: Place the frozen pizza on the box turned inside out and 3 1/2 minutes of microwave magic produces gooey cheesy goodness.

Sure the crust could be crisper. Might be worth trying the alternate oven baking instructions. I chose to embrace the soft bready texture and folded the pizza, eating it as a sandwich.

The sauce has a pleasantly strong tomato flavor. The cheese is mild. And the cauliflower provided minimal vegetable essence to the crust.

The Life Cuisine line has frozen entrees for different diets. The only gluten free choices are the pizzas – three cheese or pepperoni.

I’ve seen these pizzas at Giant Eagle and Walmart.

If you’re like me during this quarantine you’ve been baking, thinking about baking, looking for recipes for baking, loving the smell of your kitchen with something in the oven BAKING!

According to all my non gf friends and family it’s been hard this past month to access flour for baking. I don’t go to many stores, mostly I’ve been using my local store’s staff to do my shopping and then picking up curbside. So when I was in a store this week I was shocked to see that not only were the shelves of traditional flours empty but also all the g-f flours were gone.

Yesterday I was looking for a specific recipe on-line and what popped up was a recipe made specifically with gfjules flour. I remember early in my CD diagnosis that this flour was easily accessible in Cleveland. Later after so many flours came to the market this flour just disappeared from our area so I was super happy to see it still available. And I was super surprised to see it was also in stock!!

Crepini Egg Wraps With Cauliflower

Crepini makes an interesting product: eggy crepes with cauliflower.

The package suggests using them to replace your wraps, buns, breads, taco shells, crepes and pancakes.

Crepini describes the crepes as a healthy alternative to breads as they have no sugar, dairy, grains or carbs. Perfect for people with diet restrictions.

But they are really tasty and fun. Family without diet restrictions loved them, too.

They don’t taste like much of anything. A bit eggy. The caulifloweriness was minimal. While I made savory wraps, they’d also work well with sweet fillings.

They are quite sturdy and hold up well while filling and eating.

The package suggests eating them straight from the refrigerator or heating for 10 seconds in a microwave or skillet. Didn’t seem to make much of a difference in my experience.

The package I bought at Costco is labeled gluten free, with fourteen 10 inch wraps for $8.99. Ingredients are eggs, cauliflower powder, olive oil, sea salt, xanthan gum, spices, and citric acid. Each large wrap has 30 calories.

The Crepini website notes a number of versions of the product. A friend found smaller size wraps at Aldi’s. And the Crepini website product finder says some are available at Walmart.
