Heinen’s Breakfast Cereals

Heinen’s has a line of organic gluten free breakfast cereals. I listened to my inner child and tried the “Frosted Flakes”. The box lists only 3 ingredients: organic milled corn, organic sugar and salt. Interestingly, it is a product of Italy.

When paired with milk the cereal remained crisp. It was less sweet than my recollections of the Frosted Flakes of my youth, though the cereal milk at the bottom of the bowl was quite a treat.

The cereal was $1 off on the day of my purchase.

Goodman Gluten free

On 2 recent trips to Heinen’s, Mayfield Vlg. and Shaker, I came across Goodman gluten free offerings in the bakery department. The items included on the shelf that day were bread, brownies, snack cake, and cupcakes. I purchased the bread, cupcakes, and the snackcake.

The bread is a small loaf, about 12 slices, at $6.99. It has a gummy textural look but I found it was not at all gummy. It toasts great, holds up with toppings, and makes a great toast for sandwiches including hot sandwiches where most g-f bread collapse, crumble and become messy. We’ve used it for BLT’s, breakfast sandwiches, and burgers. All with much success and great flavor!

The cupcakes (6 minis) and snackcake, $5.99 each, are perfect size for light dessert. I found the cakes and frosting to be quite sweet but the texture and flavor of both was outstanding.

Goodman Gluten-free are not only g-f but free of dairy, nuts, and soy.

Reese’s Miniature Cups with Pretzels

Believe it or not, this product is labeled gluten free.

According to the Hershey’s website all Reese’s Peanut Butter Cups, except seasonal shaped items, are gluten free.

From the label ingredient list, I’d guess the pretzels are made with brown rice flour, potato starch, and cornstarch.

I found the 2.1 oz bag at Dollar Tree.

Irish Soda Bread by gfJules

Ingredients

  • ¾ cup+ 2 Tbs. buttermilk or non-dairy or dairy milk with 1 Tbs. apple cider vinegar added
  • 2 cup (270 gr) gfJules™ Gluten Free All Purpose Flour
  • 2 Tbs. granulated sugar (omit if making savory)
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 3 Tbs. butter or non-dairy alternative (Earth Balance® Buttery Sticks)
  • 1 tsp. baking soda
  • 1 egg white or egg substitute like 2 Tbs. vegan mayo
  • 1 cup seedless raisins (optional)
  • ½ Tbs. caraway seeds (optional)
  • 1/2 cup shredded cheddar or vegan cheddar (optional)
  • 1-1 Tbs. fresh rosemary (optional)

Instructions

Preheat oven to 375° F.

If not using buttermilk, mix milk with 1 tablespoon apple cider vinegar. Set aside to curdle.

Blend together gfJules Flour, sugar (if using), baking powder and salt.

Cut in the butter with a pastry blender or two butter knives until the mixture resembles a pebbly, course meal.

Add baking soda to milk mixture, then stir into dry mix with egg white and additions (raisins; seeds; cheese; herbs, etc).

Mix with a fork or paddle mixing attachment until integrated.

Scoop dough onto a floured (with gfJules Flour) counter or pastry mat and roll into ball then transfer to a lightly oiled and floured (with gfJules Flour) 7-inch glass bowl or 6-8 inch cake pan.

If needed, wet a rubber spatula with water and smooth the top of the ball of dough.

Sprinkle lightly with gfJules Flour, then make a cross in the top with a large knife.

Bake for 40 minutes or until a toothpick inserted into the center comes out clean. Remove to cool on a wire rack before slicing.
