Randy our waiter informed us that Hudson’s has a dedicated gluten-free fryer and kitchen prep area. We had french fries and an order of mashed potatoes was also specially prepared gluten-free. We also had a chopped salad and prime rib that were also great. Hudson’s also offers gluten-free pasta.  They don’t have a gluten-free menu because they want allergies to be called to their attention. They also have a dedicated kitchen area for people allergic to shellfish.

Gluten Free Chocolate Mousse Cake

This always turns out great but at some point the mixture seems to get too thick to work with.
There is a large amount of dairy in this recipe. This cake is very, very rich, dense and large!
Serves 20!

Rum Chocolate Mousse Cake
Adapted from the Washington Post
Crust:
1 7/8 cups gluten free graham cracker crumbs
4 ½ T sugar
½ c butter melted plus enough to butter 9” or 10” spring form pan
1 ¼ c finely chopped nuts
2 squares of semi sweet GF baking chocolate chopped

Mousse filling:
12 oz unsweetened GF baking chocolate
6 eggs  separated
2 1/3 c sugar
¾ c butter softened
1 ½ t vanilla
3 T rum or cream de cacao ( sometimes I leave this out-check if GF)
1 c heavy whipping cream

To prepare the crust: mix all the ingredients until moistened. Press into buttered 9” spring form pan. It should be at least half way up the pan. Bake for 8 min at 350 degrees. Cool.

To prepare filling, melt chocolate in double boiler. Whisk egg yolks until light and fluffy and gradually beat in a cup of sugar. Add the melted chocolate and keep beating.

Cream the butter with another cup of sugar and gradually add this to the chocolate mixture. Beat in vanilla and rum.

Separately beat egg whites with 1/3 c sugar and continue to beat until stiff. Fold into chocolate mixture .  Whip cream until it forms soft peaks and  fold into mousse. Pour into cooled crust and chill. Keep chilled until just before serving. This is very rich and will serve 20.

Hanukkah Gluten Free

There are many traditional foods for Hanukkah (or Chanukkah) that can be made gluten-free and still taste like you remember. Latkes are an easy adaption. Take any latke recipe and substitute gluten-free bread crumbs for regular breadcrumbs. I recommend Kinnikinnick Panko Breadcrumbs for all breadcrumb substitutions.  Your latkes will taste great but, the heavy smell from cooking them will still fill your house.  I found the Kinnikinnick Panko crumbs at Earth Fare and Mustard Seed.

Streit’s Gluten Free Matzo Ball Soup mix is excellent and tastes exactly the same as the regular mix. I found it at Giant Eagle.  I always use a gluten-free chicken broth  or homemade broth and really haven’t use the broth that comes in the mix.  Everyone has had the matzoh ball that was like a hockey puck and to avoid that, follow the directions on the package carefully. I like to make small matzoh balls and lightly form them. I think not packing them tightly is the key.

I like the brisket recipes that call for beer, onions and  Heinz chili sauce. If you make sure the chili  sauce and beer and any other ingredients are gluten-free you should be fine. Make sure the beer is really gluten-free! The secret to great brisket is to add lots and lots of onions, more than the recipe calls for,  and to cook it the day before. Chill it over night and slice it while cold then before serving warm it in the oven in its own sauce.  If you are going to someone’s home for brisket you might make them a care package of the gluten-free ingredients then you can safely eat it or offer to make it and bring it to them.

One last note last Passover there were GF Passover products for sale that are made in Israel that had no directions on them. I also tried their website with no luck.  With that said the Gluten-Free  Matzo I bought was good.

Tate’s Bake Shop Cookies

I wanted to recommend Tate’s Bake Shop Ginger Zinger Cookies. I found them at West Point Market in Akron.  They have a really nice flavor and crisp texture and don’t taste gluten-free at all more like a real bakery cookie . The package weighs 8 oz and is $5.99. They also sell a gluten-free chocolate chip cookie  which I haven’t tried yet.  Their  packages states that the cookies are baked in a gluten-free facility.

Rudi’s Gluten-Free Stuffing

Rudi’s makes a Savory Herb Stuffing which is very good. I found it at Heinen’s in Brecksville. I was never one to use a  quick stuffing before I went gluten-free but, this one is really great. To make it you add boiling water and butter and let it sit for 5 minutes.  I added  boiling chicken stock in place of the water,  butter,  and added a handful of dried cranberries and it was  really good. I think you could serve it and people wouldn’t know you were using a gluten free mix.
