Croissants and Puff Pastry

I was traveling and stopped at Wegman’s Grocery. Wegman’s is often named the #1 grocery in the U.S.
I found two good gluten free products.

Schar Gluten Free Croissants 7.8 oz with four croissants. These come frozen and are easily warmed up after defrosting for one hour. They are small and more of a roll you would eat along side your meal. They tasted really good and I would highly recommend them. It was a treat to eat a croissant with butter. They do not have the layers of a regular croissant but are delicious.

geefree Puff Pastry Sheets are a real treat after not having anything made with puff pastry in over 8 years. The sheets of puff pastry are a different color and size from the regular sheets. The regular sheets are large squares and these geefree gluten free Puff Pastry Sheets are large rectangles. It takes longer than instructed to defrost them. I think they do best in recipes where you don’t overlap sheets like in a crust. You can also roll the sheets out thinner and I found that a little difficult.
When I did roll the sheets a little thinner and cooked them long enough I could see the individual layers of the pastry. When done right they are a real treat.

I did do one variation and whipped the egg whites instead of just adding them as directed.   I think I may do this with all mixes I try because it makes the finished product lighter.  The problem with a lot of gluten free baked goods is that they are so heavy and dense.
I was surprised to see the phrase, a good source of fiber, on the package but it does contain pumpkin.  If you add nuts, or raisins, or chopped dates you’ll increase the fiber and nutrition content!

They might be just a little bit more delicate than the regular cones.
They also come in Gluten Free Regular Cones (they aren’t as tasty but they hold more ice cream).

Make sure your ice cream doesn’t contain anything with gluten like cookies or candy that isn’t gluten free.
 
So many times we are asked what dessert we can make for a guest coming to a non gluten free house. These ice cream cones save the day and what could be easier and so much fun?

 

 

One Egg Gluten Free Pancakes

When I buy pancake mix I always wonder what I’m buying other than flour and a few ingredients.

I have had this recipe for years and it works well with gluten free flour mixtures that you make or purchase. I like Bob’s Redmill 1 for 1, Pillsbury Flour mixture, any flour mixture that is for baking. You can make thin pancakes or one big thick one.   The choice is yours.

For one person

1 egg
3 heaping T flour mixture
2 t sugar
1/2 cup milk

Mix these ingredients with a whisk or electric mixer or even food processor.
Cook like you would any other pancake.

I like to add a little bit of cinnamon, lemon juice and lots of blueberries.
To make this for more than one person just multiply as needed….

For two people

2 eggs, 6 heaping T of flour, 4 t sugar, one cup of milk.
