Life Cuisine Cauliflower Crust Pizza

I highly recommend this personal sized frozen pizza.

There’s the fun factor: Place the frozen pizza on the box turned inside out and 3 1/2 minutes of microwave magic produces gooey cheesy goodness.

Sure the crust could be crisper. Might be worth trying the alternate oven baking instructions. I chose to embrace the soft bready texture and folded the pizza, eating it as a sandwich.

The sauce has a pleasantly strong tomato flavor. The cheese is mild. And the cauliflower provided minimal vegetable essence to the crust.

The Life Cuisine line has frozen entrees for different diets. The only gluten free choices are the pizzas – three cheese or pepperoni.

I’ve seen these pizzas at Giant Eagle and Walmart.

100% gluten free facility.

Beautiful looking treats.

Taste even better than they look.

The rainbow variety of macarons each has a distinct flavor. They are crisp with a bit of a chew. Packaged for presentation.

The cinnamon roll had outstanding texture. Hard to believe it is gluten free.

They also sell a variety of other baked goods including cookies, cupcakes, bagels and rolls. Cakes are made to order.

Definitely worth a trip.

Cocoa Applesauce Muffins

I had no baking powder. What to do? Found this recipe and with a few modifications had a moist and tasty muffin. Added the frosting and it was a cupcake!

Ingredients
  • 1/4 cup cocoa
  • 1/4 cup vegetable oil
  • 1 cup unsweetened applesauce
  • 1 egg beaten
  • 1 1/4 cups GF flour blend
  • 3/4 cup sugar
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1/2 cup nuts chopped, optional
Instructions
  • Preheat oven to 400°F.
  • Grease bottom only of muffin cups or use paper liners. The 2 1/2 inch diameter size will make 12 muffins.
  • In a small bowl, combine the cocoa and oil, stirring until smooth.
  • Add the applesauce and egg, blending well.
  • Combine the flour, sugar, baking soda, salt and cinnamon together.
  • Stir in the applesauce mixture and optional nuts, just until dry ingredients are moistened.
  • Fill the muffin cups 2/3 full.
  • Bake 20 minutes.
Notes

Used Bob’s Red Mill 1 to 1 GF Baking Flour.  Omitted the nuts.
